Parmesan Crusted Chicken

Ingredients2 eggs MethodSelect Fan Forced function and set the oven temperature to 180°C. Whisk together the milk and egg and place to one side. To prepare the crumb, combine the breadcrumbs, parmesan, pine nuts, parsley, salt and pepper. Using your fingers, dust chicken lightly in the flour then into the egg mix and allow it to run off slightly. Place the chicken pieces into the crumb mix and ensure a generous coating. Place onto a lightly-sprayed paper lined baking tray until you have crumbed all the chicken. Lightly spray the chicken and place into the oven on shelf 2 or 3 for 15-16 minutes or until the breadcrumbs have become crisp and golden and the chicken is cooked through. Serve immediately with salad or fresh vegetables of your choice. |
